I bought some lite firm tofu and I do not know how to prepare it. I like cooking with seasonings, I do not like bland food. I do not want this to be a bad experience for me or I will not try it again. How can I prepare the tofu without it being bland? I would like to use this as a substitute for meat. I take extra virgin olive oil in a pan, heat it up and chop up a some onion, very fine, saute that until the onions get light brown, i like them crispy, I take the tofu and cut it up into cubes throw that in the pan add some salt and pepper and lightly brown the tofu. tofu is very bland alone. the good news is that it can take on the flavor of anything you cook it with, so don't be shy with spices and seasonings. if you don't like bland food, i would suggest -not- cooking it in large chunks. the more you cut it up, the more it can absorb flavors all the way through.
as for using it as a meat substitute--it's a good source of protein, but don't expect it to have the flavor or texture of meat. no matter how well you cook it, it will remain somewhat soft and squishy. (in my experience) if you've had hot and sour soup from a chinese restaurant, it probably had strips of tofu in it. the texture is kind of like the whites of hard-boiled eggs.
try adding a small amount to a vegetable stir-fry. don't use the whole package!! maybe just a quarter of it or less at first.
first squeeze it and drain out all the water you can. then let it sit for a minute and drain it again. tofu absorbs a lot of water.
then cut it into small, thin strips, or chunks. try for the size of large dice. cook it with mushrooms, peppers, any kind of veggies you have, with garlic, soy sauce, etc.
keep an open mind about tofu! it can be used for so many things that meat never could. like cheesecake! it makes a good substitute for ricotta cheese, makes good fruit shakes, can make fake scrambled eggs, etc. if you think of it as a food with a certain texture and no flavor, rather than a meat substitute, you'll find a million uses for it.

You can have it in a soup of vege broth. Or have it out of the packet with some Japanese light soy sauce, Sprinkled with some chopped spring onions. Serve it cold. Or have it Szechwan style( don't really know the spelling, but it's Chinese ).
Fry some chopped garlic, cut big squares of tofu, throw that in, Some chilli and tomato sauce, Add some sugar, sesame oil, and chopped spring onions to garnish. Serve with rice and some stir fried veg and you have a nutritious meal! or just google tofu!
tofu absorbs the flavor of whatever you cook it with ..green beans..its green beans with asparagus its asparagus.I like it in chilli.lasagna type dishes, stews, barbequed slowly in the oven with your fav bbQ sauce. Stir fried with vegies and rice maybe pineapple, Battered and fried..
Tofu absorbs flavors so whenever you are cooking it, add some of your favorite spices. In the morning, I sometimes eat tofu eggs. I get a skillet, pour a little canola oil in it, then I put some chunkes of firm tofu in it. I take a fork, mush the tofu into smaller pieces (don't mush too much) then start to cook it. To make it look more like real eggs I add mustard. Then I add some of my favorite spices like salt, pepper, Soul Seasoning, groud Coriander, and Chili powder. You can always use your own seasonings though. PETA probably has quite a few recipes with tofu also. Good Luck in your quest for the perfect tofu.
