How can I cook tofu without it crumbling up?

I want to try to make mattar paneer but replace the paneer with tofu. But I am finding it difficult to keep the tofu from crumbling up as it appears to be softer then paneer. If I don't fry the tofu then it will taste bland.



Or is there any other way to flavor the tofu?How can I cook tofu without it crumbling up?

No problem. There are many different types of tofu in markets. They usually range from silken (very soft) soft, medium firm, firm and extra firm. In Asian markets it is also common to find marinated, pressed, dried, or even fried. All you have to do is buy firm, extra firm, pressed or fried tofu in your supermarket. I love mattar paneer too. It's a great dish.
am not sure you will find all the different types like extra firm, firm...etc so you can try lightly dusting the tofu with flour and frying it, crush salt and pepper till you have a fine powder..dip a piece of fried tofu in andthen rub two pieces of fried tofu till both have all their sides coated in salt and pepper finally you can add it to whatever dish you are making and let it simmer for a min or two to take in the spices. you should be very careful when handling tofu while dusting with flour and frying so as not to crumble it.
