Tofu at Moe's Southwest Grill?

I am a vegetarian and love the burritos at Moe's Southwest Grill. I always order mine with tofu, and it's seriously the best tofu ever. I am not the greatest at cooking tofu, but I want to know how it is they cook theirs. They seem to let it sit in some liquid and then drain it a little like you would black beans before adding it. It's soft but not mushy and gross, and it has so much flavor! If anyone knows how to prepare tofu this way, please speak up! Thanks!Tofu at Moe's Southwest Grill?
its likely an extra firm tofu that they have pressed to remove a fair amount of moisture, then marinaded in some sauce... likely hispanic in origin.
