I have a block of soft tofu and i don't have a clue how to cook it. Are you able to just stir fry it? I just want simple ways and to be told if there are some things that you cant do with tofu.

By soft tofu do you mean silken?

Silken tofu comes in a tetra-pack box, the brand is usually mori-nu.

It is white and smooth-looking.

If you have this kind of tofu, blend it with a hand blender and add 150g melted dark chocolate and a tbsp agave or maple syrup. Spoon into little pots (I do 8 it makes quite small portions but it is quite an intense pudding!)

The other kind of tofu looks more grainy and crumbly and is beige in colour. You get it in the chiller section and it is packed in water.

If this is what you have, drain off the water and wrap the tofu in a clean cloth and press, basically getting as much water out as possible. This enables the tofu to soak up your marinade. I usually use soy sauce. Shake it liberally over the tofu. Then cut into strips 0.5cm and grill each side til it is slightly crispy.

You can eat them like that with a salad or something or you can break into smaller pieces and add to a stir-fry. I usually do sweet and sour :)

One way is to mix it with scrambled eggs, and then put a little soy sauce on it. That's the only way I could bear to eat tofu.
Here is the recipe:

* 1/2 cup stock

* 2 tablespoons soy sauce

* 4 cloves minced garlic

* 1 tablespoon peeled minced ginger root

* 1 tablespoon minced Chile peppers

* 1 cup cubed tofu

* 1 tablespoon canola oil

* 1 diced onion

* 1 red bell pepper, cut into strips

* 1 cup sliced carrots

* 1/4 cup sliced mushrooms

* 1 cup broccoli florets

* 1/2 cup cauliflower florets

* 1/2 cup peas

* 2 cups cooked rice

Mix together the stock, soy sauce, garlic, ginger root, and chile peppers in a small bowl. Add the tofu cubes and marinate, preferably 3 to 24 hours. Heat a large wok or frying pan over medium heat. Add the oil, onion, bell pepper, and carrots. Saute for five minutes. Remove the tofu from the marinade with a slotted spoon and add the marinade to the pan and cook for 2 minutes. Add the mushrooms, broccoli, cauliflower, and peas and cook for 1 minute. Add the tofu, cover, and cook until the vegetables are crisp tender, about 2-3 minutes. Serve over hot rice.

tofu takes on the taste of whatever you cook it with. slice it thin and stir fry it with some vegetables and a strong sauce, like maybe garlic and soy sauce and some chili pepper...delicious!
You can mix up soft tofu with eggs to make scrambled eggs. Or buzz it up in the blender with tomato soup to add protein to the soup, and then heat the soup to serving temperature.

Soft tofu will fall apart if you try to stir-fry it along with vegetables, but if you cook it carefully in a separate pan with a little oil and soy sauce, turning it gently until it develops a bit of a crust, it should hold together. Meanwhile, in another pan, stir-fry your prepared vegetables, starting with the ones that take the longest to cook. Combine the tofu and the vegetables just before serving. Your rice will take 16 to 20 minutes, your tofu 10 minutes or so on medium heat, and your vegetables 8 minutes down to 2, depending on what they are.

My husband likes extra-firm tofu cut into 3/4-inch cubes and saut茅ed with turmeric, soy sauce, and nutritional yeast -- a genuine vegetarian dish. Our local Chinese restaurant makes curried tofu. They slice up extra-firm tofu and cook it in a wok with curry powder, carrot slices, onion, and green pepper, and serve it with rice.
