1) Wrap the block of tofu in a clean, lint-free towel and place in a colander in the sink. Put a plate and a heavy can or other weight on top of the towel-covered tofu for 30 minutes (this can dehydrate the tofu a bit and your salad won't be mushy)

You might want to taste it before you decide what to do with it. Some people don't get used to the taste or the texture... I sometimes pan fry it....

If you add Tofu to ground beef you can make very testy hamburgers.Put few cobs of Tofu in chicken sup, or any sup, for 5 min only, before soup almost done, it will test like meat, Great staff. Good Luck!
I recently made ';Buffalo Tofu'; for a friend of mine.

I breaded pieces of the extra firm tofu in an egg wash and flour (seasoned with garlic salt and pepper) then fried the hunks in canola oil. After they are golden brown I drained them on paper towels.

In a separate bowl I combined one bottle of hot sauce (not tabasco) 1/2 stick melted butter, and a splash of red wine.

Drop the fried pieces into the liquid mixture, coat well, then remove. Serve with either ranch dressign, bleu cheese dressing, or a plain yogurt to which garlic and chives have been added.
Tofu takes on any flavor you give it..there is firm and soft, if you take the firm and pat it dry and put it in terraki marinate..let it soak for a few hours turning, then bake it for 15 min at 325 it tastes like steak...and is good, also chunk it and put it in your veggie and noodle dishes or soups like veggie soup...you can throw the soft into a blender with apple juice and some fresh fruit for a great smoothie...there are tons of ways to use tofu, you can go to yahoo and type in tofu recipes and you get lots of websites with alot of great recipies..hope it helps.
