What are some easy vegetarian/vegan meals i can make?

I have to cook for my self everyday because all my family are non-vegetarian so its easier if i just do it myself. Im only a teen so im not very good at cooking really. Most of the time i either have boiled potatoes with veg or rice with veg or some kind of veggie burger. I want more nutritional but easy and quick meals to make. I just bought tofu so if anyone has any good ideas how to make it that would be good.

Experiment with stir-fries - those are pretty easy to make taste good. Tofu and vegetable stir-fries cooked in vegetable oil and soy sauce, with a bit of minced garlic and ginger powder are easy and tasty replicas of Chinese fare. That is my favorite use of tofu.



Another thing you might try - make a big pot of vegetable/lentil/bean soup/stew or a bean chilli over the weekend or on a night when you have a bit of time. Most soups and stews are pretty basic - spend 15 minutes chopping some veggies, sautee them for couple minutes, then add some water or vegetable stock and let simmer for several hours until done. Which requires a bit of prep time, but isn't very difficult. The benefit of doing this is that you can make a big portion of food and then reheat it throughout the week - and most soups taste better after a couple days in the fridge. Casseroles are another thing you can make ahead of time and store in the fridge or freeze until you want to eat them.
