Spaghetti with Sauteed Tofu

Ingredients:

1 package extra-firm regular tofu

1 medium onion

1 teaspoon minced garlic

canola oil

1 lb. spaghetti

olive oil

salt

Spaghetti sauce

Directions:

Chop the onion. Cut the tofu into 1/2 inch cubes. Heat about 2 tbsp. canola oil in a skillet. Add tofu, onion, garlic, and salt to taste. Saute until onions and tofu are golden.

Meanwhile, cook the spaghetti to desired firmness. After draining, add about 1 tbsp. olive oil, salt, and/or garlic. Serve spaghetti topped with sauce and tofu mixture.

grilled eggplant and mozerella

Ingredients:

1 large eggplant, cut into 1/2 inch slices

1/2 cup olive oil

3 tablespoons balsamic or red wine vinegar

2 cloves garlic, finely chopped

1 teaspoon dried oregano

1 teaspoon basil

salt and freshly ground pepper to taste

6 ounces mozzarella cheese, thinly sliced

Directions:

Sprinkle both sides of eggplant slices lightly with salt and place between layers of paper towels. Let stand for 1 to 2 hours, rinse and pat dry.

Combine the olive oil, vinegar, garlic oregano, basil, salt and pepper. Place the eggplant slices on a grill over moderate heat and baste with oil mixture.

Turn and baste frequently until lightly browned, about 8 minutes. Top each slice with a slice of cheese and grill an additional 2 minutes, until the cheese begins to melt.

okay, I would flake the tofu and add the egg, basil, garlic, soy sauce, vinegar and rum vinegar and make those into tofu-balls. Let them sit in the refrigerator for at least an hour to harden.

Put some salt on your eggplant to get the liquid out and then rinse off.

After they set, use the olive oil to coat a pan and saute them till they are brown and then set aside. get a gallon of water on the stove and boil your pasta and while that is going put your veggies (all you got.. including the eggplant) in a pan and saute. Add the lemon and the hot peppers then the ragu sauce. Add your tofu balls and when they are nice and hot your pasta should be almost done. Now you have a tofu pasta primavera. You can mix the pasta in or serve it underneath the sauce..
tomato garlic basil pasta tofu recipe

2 cups ragu sauce

1/2 cup fresh basil, chopped

8 garlic cloves, chopped or pressed

1/2 pound tofu, chopped

1/2 cup extra-virgin olive oil

One 1-pound package pasta

Cayenne or other hot pepper to taste

1/4 cup Parmesan or Romano Cheese, grated

Place chopped Ragu, garlic, basil, and tofu in large bowl. Add olive oil and hot pepper. Toss. Marinate for a least 2 hours (but preferably 4 hours).

Cook pasta al dente according to package directions. Drain the pasta and toss it with the grated cheese. Then toss the pasta with the tomato mixture, or place tomato mixture on top.

Well the RAGU with the angel hair pasta to make spaghetti would be good and add garlic and light bit of basil for taste. Fried eggplant is my favorite food, if my gf made me this I would love it. Try this recipe http://www.cooks.com/rec/view/0,1850,152鈥?/a> You might be able to substitute or leave out a lot of the ingredients. Good luck and I hope you make something great.
